Beef Tongue


Recently, I tried something I never thought I would... I cooked and ate cow tongue! To my surprise, it was actually good! Like, I-had-seconds-good!

Here's what I did:

Asked the butcher to save the tongue from our cow.  Left the tongue in the deep freezer for months while working up courage.  Took a deep breath, and thawed it out.

The real recipe:

Wash tongue.  Cover tongue with water, add 1 teaspoon of salt for each quart of water and slow cook for 8 hours.  For additional flavor add 1 onion sliced, 1 clove garlic, peppercorns and a bay leaf.

Remove skin and roots from tongue.  Shred tongue meat.

Heat 2 tablespoons of butter in a cast iron skillet; cook and stir beef tongue, 5-10 minutes.  Add BBQ sauce.

Serve this in tacos with chopped onion, tomato, cilantro, and wedges of lime.
